When booking with say Hilton, you've paid in advance with cc vouchers do they ask for ID when you get there or can you show them your letter???

You don't give ID, you just book in. They have your details from the booking you made so you just say who you are.

I guess the only problem is that you have to reserve the booking with a credit card therefore they will have different surnames or is it possible to do without a credit card???

You need to give them a credit card on check-in to cover phone calls etc if you make any. One way round it (assuming the booking is in another name) would be to hand over your partners credit card, this shouldn't be an issue. You won't need to show any photo ID etc.
