My OH has asked it I can do a sausage casserole, but there is so many recipes around I was wondering if someone would share a tried and tested one, either from scratch or with a packet sauce?

I do have a slow cooker too.

Thanks in advance

Fry a couple of onions with a clove of garlic, then add some sausages (about three each - this should serve four) - I like Tesco Finest or the Black Farmer ones. Brown off sausages then add a couple of cans of chopped tomatoes, a tsp of mustard, a good shake of worcester sauce, a tbs of sugar and enough stock to cover. If you like them add a can of red kidney beans. Cook in the oven (or the slow cooker) for an hour then taste, season if required and dish up with cheesy mash.
Very nice!

Thanks jenni... do you use anything to thicken up the sauce?

i used Colmans sauce and add mushrooms, onions and tons of peppers to it - 6 thick sausages about 5 average closed cup mushrooms a red, green and orange pepper and an onion and make up packet as directed and brown off the sausages

oh yeah this is just for me with a baked potato as side

I can never understand the point of sausage casserole. Firstly you have to fry or grill the sausages before you add the sauce and then put it back in the oven so what is the point - why dont you jst fry or grill the sausages, make gravy and mash and then just eat them :)

Thanks Giz :D

LoL mhoc, I think it depends on wether your just having an onion gravy with it or adding winter veggies.

Ohh that looks like and for the 2 of us it would mean 4 meals, instead of the 2.

not too sure on the Guiness as we both don't like it, but I am sure we could sub it with soemthing else. Should be fairly cheap on my Grocery Challenge too.

Hi Nitwit,
The kidney beans seem to thicken it a bit - but if you are doing it in the slow cooker add a tbs of tomato puree.
The Channel 4 recipe looks good - try cider or a honey beer instead of guinness.
Cheers

fry off some onions and garlic add some bacon lardons and fry those off to. Add some red wine and a tin of toms and some tyme (either dried or fresh) and reduce down. Add a tin of flageolet beans and cook all together. Meanwhile fry off sausages or cook in oven. Once cooked, add sausages into sauce, serve in a bowl with some crusty bread!!!

enjoy and feed your face...

I fry sauages and onions together, then chuck them in a casserole with a tin of baked beans, a tin of chopped tomatoes, add some diced mushrooms and a few herbs, then leave in the oven for an hour on Gas 2. I sometimes add some chopped pepper as well as, or instead of, mushroom for a change.

if youre reallllly in a hurry, just mix it up and bung it in.. I dont fry my sausages first at all and have even chucked em in frozen! Just cook till theyre done... me uncle used to say when they're brown they're done, when they're black they're b******d, lol

For sausage & pasta, Ive been known to cook the sausages in one pan and the pasta in another, the sauce in the wok and then add them altogether in the wok for a few mins to absorb flavours before serving

Mmmmm used to be one of my favourites Eeek I seem to be talking about food a lot lately, lol!
