View Full Version : Any one got any nectarine recipes/ideas please?

Just got given a load from my mum who can't resist a bargain!

They are quite hard at the moment and usually I end up keeping fruit to soften up and when I next look it's gone past it and ends up binned :o

Not likely to use these up as fresh fruit as too many but what else can I do with them:confused:

Grateful for any suggestions...particularly quick and easy recipes if any exist!

Nigella has a recipe for a clemantine cake - have not tried doing it using any other fruit but I would have thougt it would work the same?

Will try and find the recipe and post it when I do (unless anyone can beat me to it!)

You could try searching on the uktv food and the bbc food websites as you an search for a recipe by ingredient - I have used them both many times.

O.K. here it is straight from the Goddess' website! http://www.nigella.com/recipe/recipe_detail.aspx?rid=20002 I have made this cake and it looked fantastic and scrummy - I am sure it would have tasted lovely had I remembered to add the sugar and not found it in a dish on the worktop when I was clearing up - tasted pretty awful without it!!!

You could wait for them to ripen, then cut each one into wedges and freeze them on a tray. Once they are frozen put into bags. You can use them on breakfast cereal, or use them to make a variation on the pineapple upside down cake. They're really nice chopped up and put into muffins too, or you can make a smoothie with them. You can use them from frozen in all these, so no defrosting time.

You could make a nectarine crumble. I add strawberries to mine as well.
